Ceviche is a Peruvian seafood dish. Fish is a very common part of Peruvian cuisine, since the waters near Peru provide a bountiful supply of it. Ceviche is inspired by Japanese cuisine, and is made with raw fish, similar to sushi. However, this fish is “cooked” without heat by soaking in a citrus marinade. This turns the fish white and infuses it with flavor. It is often served with sliced onions. Some people are nervous to try fish if they consider it to be uncooked, but once they try ceviche, they order this dish again and again at our Peruvian restaurant. It is both healthy and delicious!
