Aji Amarillo is a yellow hot pepper native to Peru. Aji sauce is used in many traditional Peruvian dishes, such as Papa a la Huancaina. This creamy sauce is a blend of ingredients such as evaporated milk and white cheese which balance the spicy pepper. Watch out – this sauce is addicting! Many of our guests at our Norwalk restaurant enjoy this sauce with their Milanesa de Pollo, or with fresh bread.
