Lomo Saltado is a great example of the way Peruvian chefs use tomatoes to complement their delicious creations.
Did you know that the first form of tomato, a small green fruit, originated in the highlands of Peru? Eventually, this variation expanded into about a dozen different varieties that are recognized today. The tomato is closely related to the potato and chili pepper, which also originated in Peru. Tomatoes are used in many ways in Peruvian food. You will find tomatoes in Parihuela, a popular seafood soup, and our famous Lomo Saltado, a beef stir fry.
