
Shellfish is often used in Peruvian soups and other dishes, because there is an abundance of fresh seafood available in Peru. In fact, Peru supports more species of fresh and saltwater fish than any other country in the world. The waters off of Peru’s North Coast produce fabulous lobster, shrimp, oysters, and crab. Octopus, squid, mussels, and clams can also be found along the coast. Dishes such as Parihuela, a seafood soup, often combine an impressive list of shellfish along with white fish like sea bass.
