The traditional sauce we serve with each Fiesta meal is called Aji, pronounced “a-hee.” It is made with a secret recipe that includes hot pepper, also called Aji. The color can range from light green to yellow, depending on the type of Aji used. We make our Aji sauce each day, using the freshest ingredients available, so the taste can vary slightly. Native Peruvians put Aji on Peruvian food such as Lomo Saltado. Many guests enjoy our Aji with their bread, as well as the rest of the meal. Our chefs have been asked to share the recipe countless times!
